- 8 piecesWooden Skewers(if using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning)
Instructions
Wash the sweet potatoes thoroughly. You can peel them if you prefer, but leaving the skin on adds extra nutrients and texture. Cut the sweet potatoes into approximately 1-inch (2.5 cm) thick rounds or cubes. Try to make them uniform in size for even cooking.
In a medium bowl, whisk together the olive oil, lime juice, chopped cilantro, minced garlic, cumin powder, chili powder, salt, and black pepper to create the marinade.
Add the sweet potato pieces to the marinade, ensuring they are all well coated. Let them marinate for at least 15-30 minutes at room temperature, or up to 2 hours in the refrigerator for deeper flavor.
Thread the marinated sweet potato pieces onto the pre-soaked wooden skewers (or metal skewers). Don't pack them too tightly, leaving a little space between each piece.
Preheat your grill to medium-high heat (around 375-400°F / 190-200°C). Lightly oil the grill grates to prevent sticking.
Place the sweet potato skewers on the hot grill. Grill for 4-6 minutes per side, rotating frequently, until the sweet potatoes are tender and have nice char marks. Total grilling time will be approximately 15-20 minutes, depending on the thickness of your sweet potato pieces and grill temperature.
Once cooked, remove the skewers from the grill. Garnish with a little extra fresh cilantro, if desired, and serve immediately as a delicious side dish.
