- 60 mlLime juice

Instructions
For the dressing, combine lime juice, honey, olive oil, minced garlic, chopped mint, a pinch of salt, and a pinch of pepper in a small bowl. Whisk until well combined and set aside.
Preheat your grill to medium-high heat (about 375-400°F / 190-200°C). Clean the grill grates and lightly oil them to prevent sticking.
Cut each head of romaine lettuce lengthwise into halves or quarters, depending on size. Slice the halloumi cheese into 1/2-inch (1.25 cm) thick pieces. Cut the peaches in half and remove the pits.
Brush the cut sides of the romaine lettuce, both sides of the halloumi slices, and the cut sides of the peaches with 2 tablespoons of olive oil. Season lightly with salt and pepper.
Place the romaine lettuce, cut-side down, on the hot grill. Grill for 2-3 minutes per side, or until slightly charred and softened. Remove from grill and set aside.
Next, place the halloumi slices on the grill. Cook for 2-3 minutes per side, until golden brown and slightly crispy. Remove from grill.
Finally, place the peaches, cut-side down, on the grill. Grill for 3-4 minutes, or until grill marks appear and the peaches are slightly softened. Remove from grill.
Arrange the grilled romaine, halloumi, and peaches on a serving platter. Drizzle generously with the mint-lime dressing. Serve immediately and enjoy this fresh and flavorful salad!
