Instructions
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
Cut the halloumi into 1-inch cubes. Core and deseed the bell peppers, then cut them into 1-inch pieces. Cut the zucchini into 1/2-inch thick half-moons. Peel and quarter the red onion, then separate the layers into petals. Leave the cherry tomatoes whole.
In a large bowl, combine the halloumi, bell peppers, zucchini, red onion, and cherry tomatoes. Drizzle with 2 tablespoons of olive oil, and season with salt and pepper. Toss gently to coat all ingredients.
Thread the halloumi and vegetables alternately onto the skewers. Aim for a balanced distribution of ingredients on each skewer.
Prepare the lemon-mint vinaigrette: In a small bowl, whisk together 3 tablespoons of olive oil, lemon juice, chopped fresh mint, honey, minced garlic, salt, and pepper until well combined.
Preheat your grill to medium-high heat (375-400°F / 190-200°C). Lightly oil the grill grates to prevent sticking.
Place the skewers on the hot grill. Grill for 3-5 minutes per side, or until the halloumi is golden brown and slightly softened, and the vegetables are tender-crisp with nice grill marks. You'll need to turn them a few times to ensure even cooking.
