Instructions
Prepare the Mint Yogurt Dip: In a small bowl, combine the Greek yogurt, chopped fresh mint, lemon juice, salt, and pepper. Stir well until all ingredients are thoroughly mixed. Cover and refrigerate until ready to serve.
Prepare the Halloumi: Cut the halloumi cheese into 1-inch (2.5 cm) cubes. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
Thread the halloumi cubes onto the skewers. You should get about 4 cubes per skewer. Brush the halloumi skewers lightly with olive oil and season with a pinch of salt and pepper.
Prepare the Honey-Chili Glaze: In a separate small bowl, whisk together the honey, soy sauce, Sriracha sauce, smoked paprika, and minced garlic until well combined.
Preheat your grill to medium-high heat (about 375-400°F / 190-200°C). Clean and lightly oil the grill grates to prevent sticking.
Grill the halloumi skewers for 2-3 minutes per side, or until golden brown and slightly charred. During the last 2 minutes of grilling, generously brush the skewers with the honey-chili glaze, turning them frequently to coat evenly and prevent burning.
Remove the grilled halloumi skewers from the grill. Serve immediately with the chilled Mint Yogurt Dip on the side. Enjoy your delicious meal!
