Instructions
Cut the halloumi cheese into ½-inch thick slices. Pat them dry with a paper towel to ensure a good sear.
Cut the cantaloupe and honeydew melons in half, scoop out the seeds, and then cut the flesh into bite-sized cubes or use a melon baller for decorative spheres.
Heat a grill pan or outdoor grill to medium-high heat. Lightly brush the halloumi slices with a little olive oil to prevent sticking.
