Salad
- 2 tbspOlive oil
- 100 gMixed greens
Dressing
- 0.25 cupFresh mint leaves
- 0.25 cupFresh lime juice
- 2 tbspOlive oil
- 1 tspHoney
- 1 pinchSalt(to taste)
- 1 pinchBlack pepper(to taste)
Instructions
Wash and pat dry the peaches. Cut them in half, remove the pit, and then slice each half into 3-4 wedges. Cut the halloumi cheese into 1/2-inch (1.25 cm) thick slices.
Heat a grill pan or outdoor grill to medium-high heat. Lightly brush the peach wedges and halloumi slices with 1 tablespoon of olive oil.
Grill the peaches for 2-3 minutes per side, until they have nice grill marks and are slightly softened. Grill the halloumi for 1-2 minutes per side, until golden brown and slightly crispy.
While the peaches and halloumi are grilling, prepare the dressing. In a small bowl, whisk together the fresh mint leaves, lime juice, 2 tablespoons of olive oil, honey, salt, and black pepper until well combined.
In a large serving bowl, gently toss the mixed greens with the remaining 1 tablespoon of olive oil. Arrange the grilled peaches and halloumi slices over the greens.
Drizzle the mint-lime dressing generously over the salad. Serve immediately and enjoy!
