- 2 mediumPeaches(firm, ripe)
- 200 gHalloumi cheese
Salad
- 2 tbspOlive oil
- 100 gMixed greens
Dressing
- 0.25 cupFresh mint leaves
- 0.25 cupFresh lime juice
- 2 tbspOlive oil
- 1 tspHoney
- 1 pinchSalt(to taste)
- 1 pinchBlack pepper(to taste)
Instructions
Wash and pat dry the peaches. Cut them in half, remove the pit, and then slice each half into 3-4 wedges. Cut the halloumi cheese into 1/2-inch (1.25 cm) thick slices.
Heat a grill pan or outdoor grill to medium-high heat. Lightly brush the peach wedges and halloumi slices with 1 tablespoon of olive oil.
Grill the peaches for 2-3 minutes per side, until they have nice grill marks and are slightly softened. Grill the halloumi for 1-2 minutes per side, until golden brown and slightly crispy.
While the peaches and halloumi are grilling, prepare the dressing. In a small bowl, whisk together the fresh mint leaves, lime juice, 2 tablespoons of olive oil, honey, salt, and black pepper until well combined.
In a large serving bowl, gently toss the mixed greens with the remaining 1 tablespoon of olive oil. Arrange the grilled peaches and halloumi slices over the greens.
Drizzle the mint-lime dressing generously over the salad. Serve immediately and enjoy!
💡 Tipp
Varianten
- Add a sprinkle of toasted pecans or walnuts for extra crunch.
- Incorporate a few slices of red onion for a sharper taste.
- Try adding some cherry tomatoes for a burst of freshness.
Ersatz & Alternativen
- If fresh peaches are out of season, use nectarines or high-quality canned peach halves (drained) instead.
- For a different cheese, feta or goat cheese can be used, though they won't grill the same way as halloumi.
- If you don't have fresh mint, a smaller amount of dried mint can be used in the dressing, but fresh is highly recommended for flavor.
Aufbewahrung
Store any leftover salad and dressing separately in airtight containers in the refrigerator for up to 1 day. The grilled halloumi and peaches are best enjoyed fresh.
