- 600 gBoneless, skinless chicken thighs(cut into 1-inch cubes)
- 400 gFresh pineapple(peeled, cored, and cut into 1-inch cubes)
- 2 tbspOlive oil
- 1 tspSalt(to taste)
- 0.5 tspBlack pepper(to taste)
For the Glaze
- 60 mlHoney
- 30 mlSoy sauce
- 15 mlRice vinegar
- 1 tbspSriracha sauce(or to taste)
- 1 cloveGarlic(minced)
- 1 tspFresh ginger(grated)
- 1 tbspSesame seeds(for garnish)
- 2 tbspFresh cilantro(chopped, for garnish)
- 8 piecesWooden or metal skewers(If using wooden, soak in water for 30 minutes)
Instructions
In a medium bowl, combine the cubed chicken with olive oil, salt, and pepper. Toss to coat evenly. Set aside.
For the glaze, whisk together honey, soy sauce, rice vinegar, sriracha, minced garlic, and grated ginger in a small saucepan. Bring to a gentle simmer over medium heat and cook for 3-5 minutes, or until the glaze slightly thickens. Remove from heat and set aside.
Thread the chicken and pineapple cubes alternately onto the prepared skewers. Aim for 4-5 pieces of chicken and pineapple per skewer.
Preheat your grill to medium-high heat (about 375-400°F or 190-200°C).
Lightly oil the grill grates to prevent sticking. Place the skewers on the hot grill.
Grill for 8-10 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. During the last 2-3 minutes of grilling, brush the skewers generously with the honey chili glaze. Continue grilling, turning once, until the glaze is caramelized and slightly sticky.
Remove the skewers from the grill. Garnish with sesame seeds and fresh cilantro before serving. Serve immediately.
