- 28 ozCrushed tomatoes
- 0.5 cupBeef broth
- 0.25 cupFresh basil(chopped)
- 1 tspDried oregano
- 1 pinchSalt(to taste)
- 1 pinchBlack pepper(to taste)
- 0.25 cupFresh parsley(chopped, for garnish)
Instructions
Lay out the beef slices on a clean surface. Season each slice lightly with salt and pepper. Place one slice of prosciutto on each beef slice, then sprinkle generously with grated Parmesan cheese.
Carefully roll up each beef slice tightly and secure with a toothpick or kitchen twine to prevent it from unraveling during cooking.
Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Brown the beef involtini on all sides until golden brown. Remove them from the pot and set aside.
In the same pot, add the chopped onion and cook until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
Pour in the crushed tomatoes, beef broth, chopped fresh basil, and dried oregano. Season with salt and pepper to taste. Bring the sauce to a simmer.
Return the browned involtini to the pot, nestling them into the sauce. Reduce the heat to low, cover the pot, and let it simmer for at least 1.5 to 2 hours, or until the beef is fork-tender. Stir occasionally to prevent sticking.
Once cooked, remove the toothpicks or twine from the involtini. Garnish with fresh chopped parsley before serving.
Serve hot with your favorite pasta, polenta, or crusty bread to soak up the delicious sauce.
