- 2 clovesGarlic(minced)
- 8 ozOrzo pastaGluten
- 0.5 cupDry white wine
- 3 cupsVegetable broth(hot)
- 1 lbGreen asparagus(trimmed and cut into 1-inch pieces)
- 2 tbspLemon juice
- 1 tspLemon zest
- 0.5 cupParmesan cheese(freshly grated, plus more for serving)Milch
- 0.5 cupSlivered almonds(toasted)
- 1 tspSalt(to taste)
- 1 tspBlack pepper(freshly ground, to taste)
- 2 tbspFresh parsley(chopped, for garnish)
Instructions
Heat olive oil in a large skillet or Dutch oven over medium heat. Add the chopped shallot and cook until softened, about 3-4 minutes.
Add minced garlic and cook for another minute until fragrant, being careful not to burn it.
Stir in the orzo pasta and cook for 1-2 minutes, toasting it lightly.
Pour in the white wine and stir, scraping up any browned bits from the bottom of the pan. Let it simmer until almost completely absorbed.
Add a cup of hot vegetable broth and the asparagus pieces. Stir frequently until the broth is mostly absorbed. Continue adding the remaining broth, one cup at a time, allowing each addition to be absorbed before adding the next, similar to making risotto. This should take about 10-15 minutes, until the orzo is al dente and creamy.
Once the orzo is cooked, remove from heat. Stir in the lemon juice, lemon zest, and grated Parmesan cheese. Season with salt and freshly ground black pepper to taste.
Divide the orzo among serving bowls. Garnish with toasted slivered almonds and fresh chopped parsley. Serve immediately, with extra Parmesan cheese on the side if desired.
