- 80 gProsciutto(Thinly sliced)

Instructions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Snap off the woody ends of the green asparagus. You can peel the lower third if desired, but it's often not necessary for green asparagus.
In a large bowl, toss the asparagus with 1 tablespoon of olive oil, a pinch of salt, and pepper. Spread the asparagus in a single layer on the prepared baking sheet.
Roast the asparagus for 10-12 minutes, or until tender-crisp. While the asparagus is roasting, arrange the prosciutto slices on a separate small baking sheet or a corner of the asparagus sheet if there's space. Bake for 5-7 minutes, or until crispy. Watch carefully to prevent burning.
While the asparagus and prosciutto are cooking, prepare the lemon ricotta. In a medium bowl, combine the ricotta cheese, the zest of one lemon, the juice of half a lemon (or more to taste), the minced garlic, honey, and the remaining 1 tablespoon of olive oil. Season with salt and pepper to taste. Mix until well combined and creamy.
To serve, spread the lemon ricotta mixture onto plates. Arrange the roasted asparagus spears on top of the ricotta. Crumble the crispy prosciutto over the asparagus.
Garnish with fresh chopped chives and serve immediately. Enjoy this delightful spring dish!
