- 50 mlVegetable Broth

- 2 tbspFresh Parsley(chopped)
Instructions
Cook the spaghetti according to package directions until al dente. Before draining, reserve about 1/2 cup (120 ml) of the pasta water.
While the pasta is cooking, prepare the asparagus. Wash the green asparagus, snap off the woody ends, and cut the spears into bite-sized pieces (about 1-inch long).
Heat the olive oil in a large skillet over medium heat. Add the finely diced shallot and sauté for about 2-3 minutes until translucent. Add the minced garlic and cook for another minute until fragrant.
Add the cut asparagus to the skillet and sauté for 5-7 minutes, stirring occasionally, until tender-crisp. Season with salt and pepper.
In a bowl, combine the ricotta cheese, lemon zest, lemon juice, and vegetable broth. Mix well until smooth. Season with salt and pepper to taste.
Drain the cooked spaghetti and add it directly to the skillet with the asparagus. Pour the ricotta mixture over the pasta and asparagus. Toss everything together, adding a little of the reserved pasta water if needed to create a creamy sauce.
In a small, dry pan, toast the pine nuts over medium heat for 2-3 minutes until golden brown and fragrant. Be careful not to burn them.
Serve the lemon ricotta pasta with green asparagus immediately, garnished with toasted pine nuts and fresh chopped parsley.
