- 500 gGreen asparagus
- 1 tbspOlive oil
- 1 pcOnion(small)
- 2 clovesGarlic
- 1 tspPaprika powder(smoked)
- 0.5 tspDried oregano
- 120 mlChicken broth
- 1 pinchSalt(to taste)
- 1 pinchBlack pepper(freshly ground, to taste)
- 2 tbspFresh parsley(chopped, for garnish)
Instructions
Wash the green asparagus, snap off the woody ends, and cut into 1-inch pieces. Cut the chicken breast fillets into bite-sized cubes.
Peel and finely chop the onion and garlic.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken cubes and cook for 3-4 minutes until golden brown on all sides. Remove the chicken from the skillet and set aside.
Add the chopped onion to the same skillet and sauté for 2-3 minutes until translucent. Add the garlic and cook for another minute until fragrant.
Stir in the paprika powder and dried oregano, cooking for about 30 seconds until aromatic.
Add the asparagus pieces to the skillet and sauté for 3-5 minutes until tender-crisp.
Pour in the chicken broth and bring to a simmer. Return the cooked chicken to the skillet. Season with salt and freshly ground black pepper to taste.
Cook for another 2-3 minutes, allowing the flavors to meld and the sauce to slightly reduce. Garnish with fresh chopped parsley and serve immediately.
