Instructions
Prepare the vegetables: Wash and chop the bell peppers, zucchini, and red onion as directed. Halve the cherry tomatoes and pit the Kalamata olives.
In a large bowl, combine the chopped bell peppers, zucchini, red onion, cherry tomatoes, and Kalamata olives. Add the olive oil, dried oregano, dried thyme, salt, and black pepper. Toss well to ensure all vegetables are evenly coated.
Preheat your air fryer to 375°F (190°C) for 3-5 minutes.
Transfer the seasoned vegetables to the air fryer basket in a single layer. You may need to cook them in batches, depending on the size of your air fryer, to avoid overcrowding.
Air fry for 15-20 minutes, shaking the basket halfway through, until the vegetables are tender-crisp and slightly caramelized. Cooking time may vary based on your air fryer model.
Once cooked, transfer the roasted vegetables to a serving dish. Garnish with crumbled feta cheese and fresh chopped parsley before serving.
