Salad
- 180 gQuinoa
- 350 mlVegetable broth
- 1 mediumCucumber
- 200 gCherry tomatoes
- 1 mediumRed bell pepper
- 0.5 mediumRed onion
- 100 gFeta cheese(crumbled)
- 50 gBlack olives(pitted and halved)
- 0.25 cupFresh parsley(finely chopped)
- 0.25 cupFresh mint(finely chopped)
Dressing
- 3 tbspOlive oil
- 2 tbspLemon juice
- 1 tspDijon mustard
- 1 pinchSalt(to taste)
- 1 pinchBlack pepper(to taste)
Instructions
Rinse the quinoa thoroughly under cold water. Combine the quinoa and vegetable broth in a pot. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until all the liquid is absorbed. Remove from heat and let it sit covered for another 5 minutes. Fluff with a fork and let it cool completely.
While the quinoa cools, prepare the vegetables. Dice the cucumber and red bell pepper. Halve the cherry tomatoes. Finely chop the red onion, parsley, and mint. Crumble the feta cheese and halve the pitted black olives.
In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper to create the dressing.
In a large bowl, combine the cooled quinoa, diced cucumber, cherry tomatoes, red bell pepper, red onion, feta cheese, black olives, fresh parsley, and fresh mint.
Pour the dressing over the salad ingredients. Toss gently to ensure everything is well coated.
Taste and adjust seasonings if necessary. Serve immediately or chill in the refrigerator for at least 30 minutes to allow the flavors to meld. Enjoy your fresh quinoa salad!
