- 250 gall-purpose flour
- 3 largeeggs

- 1 Pinchground black pepper(for the spätzle dough)
- 200 gEmmentaler cheese(grated)
- 100 gGruyère cheese(grated)
- 2 tbspbutterMilch
- 2 mediumonions(sliced into thin rings)
- 2 tbspall-purpose flour(for dredging onions)
- 1 tbspvegetable oil(for air fryer)
- 1 Pinchfresh chives(finely chopped, for garnish)
Instructions
First, prepare the spätzle dough. In a large bowl, combine the flour, eggs, milk, 1 teaspoon salt, and a pinch of pepper. Mix well with a wooden spoon or a hand mixer until the dough is smooth and slightly elastic. It should be thick enough to slowly drip from the spoon. Let the dough rest for about 10-15 minutes.
Bring a large pot of salted water to a boil. Using a spätzle maker (or a colander with large holes), press the dough directly into the boiling water. Cook the spätzle in batches until they float to the surface (this usually takes 1-2 minutes). Remove the cooked spätzle with a slotted spoon and immediately transfer them to a bowl of cold water to prevent sticking. Drain well.
For the fried onions, heat 1 tablespoon of butter in a pan over medium heat. Dredge the sliced onions in 2 tablespoons of flour, shaking off any excess. Add the floured onions to the pan and fry until golden brown and crispy, stirring occasionally. Remove the onions and set aside on a paper towel to absorb excess oil.
Preheat your air fryer to 375°F (190°C). Lightly grease the air fryer basket with 1 tablespoon of vegetable oil.
In a large bowl, combine the cooked spätzle with the grated Emmentaler and Gruyère cheeses. Add the remaining 1 tablespoon of butter, melted, and mix well until the cheese is evenly distributed and the spätzle are coated.
Transfer the cheesy spätzle to the air fryer basket in a single layer, if possible. You may need to cook them in batches. Air fry for 10-15 minutes, shaking the basket halfway through, until the spätzle are golden brown and crispy. The cheese should be melted and slightly caramelized.
Serve the crispy air-fried Käsespätzle immediately, topped generously with the fried onions and a sprinkle of fresh chives. Enjoy!
