Instructions
First, prepare the crispy gnocchi. In a large bowl, combine the potato gnocchi with 2 tablespoons of olive oil, garlic powder, dried oregano, salt, and black pepper. Toss gently to ensure all gnocchi are evenly coated.
Preheat your air fryer to 375°F (190°C). Arrange the seasoned gnocchi in a single layer in the air fryer basket. You may need to cook them in batches, depending on the size of your air fryer. Do not overcrowd the basket to ensure even crisping.
Air fry for 15-20 minutes, shaking the basket every 5 minutes, until the gnocchi are golden brown and crispy on the outside. Set aside.
While the gnocchi are cooking, prepare the tomato sauce. Heat 1 tablespoon of olive oil in a medium saucepan over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
Stir in the canned diced tomatoes, vegetable broth, dried basil, and sugar. Bring the sauce to a gentle simmer, then reduce the heat to low, cover, and let it cook for 10-15 minutes, allowing the flavors to meld.
Season the tomato sauce with salt and black pepper to taste. If you prefer a smoother sauce, you can carefully blend it with an immersion blender or transfer it to a regular blender.
