Instructions
Cook the fettuccine according to package directions in a large pot of salted boiling water until al dente. Reserve about 1 cup (240 ml) of pasta water before draining.
While the pasta is cooking, melt the butter in a large skillet or saucepan over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
Pour in the heavy cream and bring to a gentle simmer. Reduce the heat to low and stir in the freshly grated nutmeg. Let it simmer for 2-3 minutes, allowing the sauce to slightly thicken.
Remove the skillet from the heat. Gradually add the grated Parmesan cheese, stirring constantly until the cheese is melted and the sauce is smooth and creamy. If the sauce is too thick, add a splash of the reserved pasta water until it reaches your desired consistency.
Season the Alfredo sauce with salt and freshly ground black pepper to taste. Remember that Parmesan cheese is already salty, so adjust accordingly.
Add the drained fettuccine to the skillet with the Alfredo sauce. Toss gently to coat the pasta completely with the sauce.
