- 450 gfresh spinach
- 2 tbspbutterMilch
- 1 clovegarlic(minced)
- 1 tbspall-purpose flour
- 0.5 cupmilk
- 0.25 cupheavy cream
- 1 pinchnutmeg(freshly grated)
- 1 pinchsalt(to taste)
- 1 pinchblack pepper(freshly ground, to taste)
- 4 largeeggs
- 1 tbspvegetable oil(for frying eggs)
Instructions
Wash the fresh spinach thoroughly. If using frozen spinach, thaw it and squeeze out any excess water.
In a large pot or deep skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to brown it.
Add the fresh spinach to the pot. Cook, stirring occasionally, until the spinach wilts down, which should take about 3-5 minutes. If using frozen spinach, add it now and heat through.
Sprinkle the flour over the spinach and stir well to combine. Cook for another minute to cook out the raw flour taste.
Gradually whisk in the milk and heavy cream, stirring constantly to prevent lumps. Bring the mixture to a gentle simmer, then reduce the heat to low. Let it cook for 2-3 minutes, stirring, until the sauce thickens to your desired consistency.
Season the creamed spinach with freshly grated nutmeg, salt, and black pepper to taste. Adjust seasonings as needed.
While the spinach is simmering, heat the vegetable oil in a separate non-stick skillet over medium heat. Carefully crack the eggs into the pan, making sure they don't touch.
Cook the eggs for 2-3 minutes, or until the whites are set and the yolks are still runny (or to your preferred doneness). Season the fried eggs with a pinch of salt and pepper.
Serve the creamy creamed spinach hot, topped with one or two fried eggs per serving. Enjoy immediately!
