Instructions
Wash all vegetables. Cut bell peppers into approximately 1-inch (2.5 cm) squares. Cut zucchini into 0.5-inch (1.25 cm) thick slices, then halve them. Peel the red onion and cut it into wedges, separating the layers.
For the marinade, finely chop the garlic. In a large bowl, combine olive oil, chopped garlic, fresh rosemary, fresh thyme, and dried oregano. Season with salt and pepper to taste.
Add the prepared bell peppers, zucchini, red onion, and cherry tomatoes to the bowl with the marinade. Toss gently to ensure all vegetables are well coated. Let marinate for at least 30 minutes at room temperature, or ideally, 1-2 hours in the refrigerator.
If using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning on the grill. Preheat your grill to medium-high heat (approx. 375-400°F / 190-200°C).
Thread the marinated vegetables alternately onto the skewers, creating a colorful pattern. Don't pack them too tightly, as this will allow them to cook more evenly.
Grill the vegetable skewers for 10-15 minutes, turning them occasionally, until the vegetables are tender-crisp and have nice grill marks. Serve immediately as a side dish or a light main.
