- 200 gSpaghettiGluten
- 6 clovesGarlic(thinly sliced)
- 0.5 cupExtra Virgin Olive Oil
- 1 tspRed Pepper Flakes(or to taste)
- 0.25 cupFresh Parsley(finely chopped)
- 1 pinchSalt(to taste)
- 1 pinchBlack Pepper(freshly ground, to taste)
Instructions
Bring a large pot of generously salted water to a rolling boil. Add the spaghetti and cook according to package directions until al dente. Before draining, reserve about 1 cup (240 ml) of the pasta cooking water.
While the spaghetti cooks, heat the olive oil in a large skillet or pan over medium-low heat. Add the thinly sliced garlic and red pepper flakes. Sauté gently for 2-3 minutes until the garlic is fragrant and lightly golden. Be careful not to burn the garlic, as it will become bitter.
Drain the spaghetti and add it directly to the skillet with the garlic and oil mixture. Toss well to coat the pasta evenly.
Add about half of the reserved pasta water to the skillet, along with the fresh chopped parsley. Toss continuously, allowing the sauce to emulsify and coat the spaghetti. Add more pasta water a little at a time if the sauce seems too dry or if you prefer a saucier consistency.
Season with salt and freshly ground black pepper to taste. Continue to toss for another minute until the sauce is glossy and well-incorporated.
Serve immediately and enjoy your delicious homemade Spaghetti Aglio e Olio!
