- 6 largeeggs
- 25 gunsalted butterMilch
- 25 gall-purpose flour
- 500 mlvegetable broth
- 2 tbspDijon mustard
- 1 tbspwhole grain mustard
- 50 mlheavy cream
- 2 tbspfresh dill(chopped)
- 1 pinchsalt(to taste)
- 1 pinchblack pepper(freshly ground, to taste)
- pinchsugar(optional, to balance flavor)
Instructions
Place the eggs in a saucepan, cover them with cold water, and bring to a boil. Once boiling, reduce the heat to a simmer and cook for 7-8 minutes for medium-boiled eggs. If you prefer harder eggs, cook for 9-10 minutes. Immediately transfer the cooked eggs to an ice bath to stop the cooking process, then peel them carefully.
For the mustard sauce, melt the butter in a medium saucepan over medium heat. Add the flour and whisk constantly for about 1-2 minutes to create a roux. Do not let it brown.
Gradually pour in the vegetable broth, whisking continuously to prevent lumps. Bring the sauce to a gentle simmer and cook for 5 minutes, stirring occasionally, until it thickens.
Remove the saucepan from the heat. Stir in both types of mustard and the heavy cream. Season with salt, freshly ground black pepper, and a pinch of sugar if desired to balance the flavors. Taste and adjust seasonings as needed.
Gently place the peeled eggs into the mustard sauce. Heat through gently for a few minutes, ensuring the eggs are warmed but not overcooked. Stir in the fresh chopped dill just before serving.
Serve the Classic German Eggs in Mustard Sauce immediately. They pair wonderfully with boiled potatoes or rice, and a side of green salad.
