Instructions
Place the eggs in a saucepan, cover them with cold water, and bring to a boil. Once boiling, reduce the heat to a simmer and cook for 7-8 minutes for medium-boiled eggs. If you prefer harder eggs, cook for 9-10 minutes. Immediately transfer the cooked eggs to an ice bath to stop the cooking process, then peel them carefully.
For the mustard sauce, melt the butter in a medium saucepan over medium heat. Add the flour and whisk constantly for about 1-2 minutes to create a roux. Do not let it brown.
Gradually pour in the vegetable broth, whisking continuously to prevent lumps. Bring the sauce to a gentle simmer and cook for 5 minutes, stirring occasionally, until it thickens.
