Dough
- 250 gAll-purpose flour
- 125 mlWater
- 2 tbspOlive oil
- 1 tspSalt
Topping
- 200 gCrème fraîcheMilch
- 1 mediumOnion
- 150 gSmoked bacon
- 1 pinchSalt(to taste)
- 1 pinchBlack pepper(to taste)
Instructions
For the dough, combine flour, water, olive oil, and salt in a bowl. Knead thoroughly for about 5-7 minutes until you have a smooth, elastic dough. Cover and let it rest at room temperature for at least 30 minutes.
Preheat your oven to 480°F (250°C) with a baking stone or a baking sheet inside to get it very hot. This helps achieve a crispy crust.
While the dough rests and the oven preheats, prepare the topping. Peel and thinly slice the onion into fine rings. Cut the smoked bacon into small strips or cubes.
Divide the dough into 2-4 equal portions, depending on how large you want your tarte flambée to be. On a lightly floured surface, roll out each portion as thinly as possible into an oval or rectangular shape. The thinner, the crispier!
Carefully spread a generous layer of crème fraîche evenly over each rolled-out dough portion, leaving a small border around the edges. Season lightly with salt and pepper.
Distribute the sliced onions and bacon evenly over the crème fraîche. Be careful not to overload the tarte flambée.
Carefully transfer the tarte flambée to the hot baking stone or baking sheet in the oven. Bake for about 8-12 minutes, or until the edges are golden brown and crispy, and the topping is lightly caramelized. Keep a close eye on it as baking times can vary.
Remove from the oven, slice, and serve immediately. Enjoy your homemade Classic Alsatian Tarte Flambée!
