- 5.3 ozwild garlic(about 150g)
- 1 tbspolive oil
- 2 mediumeggs
- 0.75 cupheavy cream
- 0.5 cupmilk
- 4.4 ozgoat cheese(about 125g, crumbled)
- 1 pinchsalt(to taste)
- 1 pinchblack pepper(freshly ground, to taste)
- 1 pinchnutmeg(freshly grated, to taste)
Instructions
For the dough, combine flour and salt in a large bowl. Add the cold, cubed butter and rub it into the flour with your fingertips until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Do not overmix. Form into a disc, wrap in plastic, and refrigerate for at least 30 minutes.
Preheat your oven to 375°F (190°C). Lightly grease a 9-inch (23 cm) quiche pan or pie dish.
Wash the wild garlic thoroughly and pat it dry. Roughly chop it. Heat olive oil in a pan over medium heat and sauté the wild garlic for 2-3 minutes until wilted. Remove from heat and let it cool slightly.
In a bowl, whisk together eggs, heavy cream, and milk. Season with salt, pepper, and freshly grated nutmeg. Stir in the sautéed wild garlic and crumbled goat cheese.
On a lightly floured surface, roll out the chilled dough into a circle large enough to fit your quiche pan. Carefully transfer the dough to the pan, pressing it gently into the bottom and up the sides. Trim any excess dough from the edges.
Pour the wild garlic and goat cheese mixture into the prepared crust.
Bake for 35-45 minutes, or until the filling is set and golden brown. A knife inserted into the center should come out clean. If the crust starts to brown too quickly, you can cover the edges with foil.
Remove the quiche from the oven and let it cool for at least 10-15 minutes before slicing and serving. This allows the quiche to set properly.
