For the filling
- 3 cupsFresh strawberries(hulled and sliced)
- 2 cupsFresh rhubarb(trimmed and chopped into 1/2-inch pieces)
- 0.5 cupGranulated sugar
- 2 tablespoonsCornstarch
- 1 teaspoonLemon juice
- 0.5 teaspoonVanilla extract
Instructions
Preheat your oven to 375°F (190°C). Grease and flour a 9x13 inch baking pan, or line with parchment paper, leaving an overhang on the sides for easy removal.
In a large bowl, whisk together the flour, rolled oats, 0.5 cup granulated sugar, baking powder, and salt for the crust and crumble.
Add the cold, cubed butter to the dry ingredients. Using a pastry blender, your fingertips, or a food processor, cut the butter into the mixture until it resembles coarse crumbs. Be careful not to overmix.
Press about two-thirds of the crumble mixture evenly into the bottom of the prepared baking pan. Reserve the remaining one-third for the topping.
In a separate medium bowl, combine the sliced strawberries, chopped rhubarb, 0.5 cup granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss gently to coat the fruit evenly.
Spread the fruit filling evenly over the pressed crust in the baking pan.
Crumble the remaining one-third of the topping mixture over the fruit filling.
Bake for 45-55 minutes, or until the topping is golden brown and the fruit filling is bubbly. If the topping browns too quickly, you can loosely tent it with aluminum foil.
Remove from the oven and let the bars cool completely on a wire rack before cutting into squares. This is important for the bars to set properly.
