- 120 mlWhole milk
- 80 mlVegetable oil
- 2 largeEggs
- 1 TeelöffelOrange zest
- 300 gRhubarb(peeled and diced into 1 cm pieces)
For coating rhubarb
- 20 gGranulated sugar
- 5 gAll-purpose flour
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch (23x13 cm) loaf pan, or line it with parchment paper.
In a large bowl, whisk together the 250 g flour, 150 g sugar, baking powder, salt, and optional cinnamon.
In a separate medium bowl, whisk together the milk, vegetable oil, eggs, and orange zest until well combined.
Pour the wet ingredients into the dry ingredients and mix with a spatula until just combined. Be careful not to overmix; a few lumps are fine.
In a small bowl, toss the diced rhubarb with the 20 g sugar and 5 g flour. This step helps prevent the rhubarb from sinking to the bottom of the bread.
Gently fold the coated rhubarb into the batter.
Pour the batter into the prepared loaf pan and spread evenly.
Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean. The top should be golden brown.
Let the bread cool in the pan for 10 minutes before carefully transferring it to a wire rack to cool completely. Slice and serve.
