For the shortcrust pastry
- 280 gall-purpose flour
- 140 gcold butterMilch
- 70 ggranulated sugar
- 1 eaegg yolk
- 2 tbspcold water

- 1000 gapples(e.g., Honeycrisp or Granny Smith, peeled, cored, and sliced)
For the apple filling
- 70 ggranulated sugar
- 1 tspground cinnamon
- 1 tbsplemon juice
- 20 gcornstarch
For the crumbles
- 150 gall-purpose flour
- 100 gcold butterMilch
- 75 ggranulated sugar
- 1 tspvanilla sugar
Instructions
For the shortcrust pastry, combine flour, cold butter (cut into small pieces), sugar, egg yolk, cold water, and a pinch of salt in a bowl. Quickly knead everything together to form a smooth dough. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
Preheat your oven to 350°F (175°C). Grease a 10-inch (26 cm) springform pan or pie dish.
For the apple filling, peel, core, and slice the apples. In a large bowl, mix the sliced apples with sugar, cinnamon, lemon juice, and cornstarch. Set aside.
For the crumbles, combine flour, cold butter (cut into small pieces), sugar, and vanilla sugar in a bowl. Use your fingertips to rub the ingredients together until coarse crumbles form. Do not overmix.
Roll out the chilled shortcrust pastry on a lightly floured surface to fit your prepared springform pan, creating a slight edge. Carefully place the dough into the pan and press it gently against the bottom and sides.
Pour the apple filling evenly over the shortcrust pastry in the pan. Distribute the crumbles generously over the apple filling.
Bake the apple pie in the preheated oven for about 50-60 minutes, or until the crumbles are golden brown and the apples are tender. If the crumbles start to brown too quickly, you can cover the pie loosely with aluminum foil.
Remove the pie from the oven and let it cool completely on a wire rack before slicing and serving. This allows the filling to set properly.
