- 0.5 cupsemolina
- 2 tbspunsalted butterMilch
- 1 largeegg
- 0.25 tspsalt
- 1 pinchnutmeg(freshly grated)
- 6 cupschicken broth(or vegetable broth)
- 2 tbspfresh parsley(chopped, for garnish)
Instructions
For the semolina dumplings: In a medium bowl, combine the semolina, softened butter, egg, salt, and nutmeg. Mix well until a cohesive dough forms. Cover the bowl and let the dough rest in the refrigerator for at least 30 minutes to allow the semolina to absorb the liquid and swell.
Bring the chicken broth to a gentle simmer in a large pot. Do not let it boil vigorously.
With wet hands or two teaspoons, form small dumplings (about 1 inch in diameter) from the semolina mixture. The dumplings will expand during cooking, so don't make them too large.
Carefully place the formed dumplings into the simmering broth. Ensure the broth is not boiling too rapidly to prevent the dumplings from breaking apart.
Reduce the heat to low, cover the pot, and let the semolina dumplings simmer gently for about 15-20 minutes, or until they are cooked through and have risen to the surface. You can test one dumpling to ensure it's cooked to your liking.
Once cooked, remove the pot from the heat. Ladle the soup with the dumplings into bowls. Garnish with fresh chopped parsley before serving.
