Instructions
For the semolina dumplings: In a medium bowl, combine the semolina, softened butter, egg, salt, and nutmeg. Mix well until a cohesive dough forms. Cover the bowl and let the dough rest in the refrigerator for at least 30 minutes to allow the semolina to absorb the liquid and swell.
Bring the chicken broth to a gentle simmer in a large pot. Do not let it boil vigorously.
With wet hands or two teaspoons, form small dumplings (about 1 inch in diameter) from the semolina mixture. The dumplings will expand during cooking, so don't make them too large.
