- 500 gfresh green beans
- 200 gpotatoes(peeled and diced)
- 100 gcarrots(peeled and diced)
- 80 gonion(finely chopped)
- 1 tbspbutterMilch
- 1 Lvegetable broth
- gsmoked bacon(diced (optional))
- 1 tbspfresh parsley(chopped)
- 1 pinchsalt(to taste)
- 1 pinchblack pepper(to taste)
- 1 pinchsavory(dried)
Instructions
Wash the green beans, trim the ends, and snap or cut them into 1-inch pieces. Peel and dice the potatoes and carrots. Finely chop the onion.
In a large pot, melt the butter over medium heat. If using, add the diced bacon and cook until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.
Add the chopped onion to the pot and sauté until translucent, about 3-5 minutes.
Add the diced potatoes and carrots to the pot and cook for another 5 minutes, stirring occasionally.
Pour in the vegetable broth and bring to a boil. Add the prepared green beans and the dried savory. Reduce heat, cover, and simmer for about 20-25 minutes, or until the vegetables are tender.
Season the soup with salt and black pepper to taste. If you'd like a thicker soup, you can mash some of the potatoes against the side of the pot.
Ladle the soup into bowls. Garnish with fresh parsley and the reserved crispy bacon, if used. Serve hot.
