- 100 ggranulated sugar
- 20 gcornstarch
- 1 Teelöffelvanilla extract

For the Topping
- 150 gall-purpose flour
- 100 grolled oats
- 100 glight brown sugar, packed
- 1 Teelöffelground cinnamon
- 1 Prise(n)salt(to taste)
- 115 gcold unsalted butter, cut into small cubesMilch
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
In a large bowl, combine the quartered strawberries and rhubarb pieces. Add the granulated sugar, cornstarch, vanilla extract, and a pinch of salt. Toss gently until the fruit is evenly coated. Pour the fruit mixture into the prepared baking dish and spread it into an even layer.
In a separate medium bowl, prepare the topping. Whisk together the all-purpose flour, rolled oats, light brown sugar, ground cinnamon, and a pinch of salt.
Add the cold, cubed butter to the dry topping ingredients. Using your fingertips or a pastry blender, cut the butter into the mixture until coarse crumbs form. Some larger pieces of butter are fine; they will create a better texture.
Evenly sprinkle the oat crumble topping over the fruit filling in the baking dish.
Bake for 40-50 minutes, or until the fruit filling is bubbly and the topping is golden brown and crisp. If the topping starts to brown too quickly, you can loosely cover it with aluminum foil.
Remove from the oven and let it cool for at least 15-20 minutes before serving. This allows the filling to set slightly. Serve warm, perhaps with a scoop of vanilla ice cream or a dollop of whipped cream.
