- 500 gRipe tomatoes(e.g., Roma or cherry tomatoes)
- 2 clovesGarlic
- 60 mlExtra virgin olive oil(plus more for drizzling)
- 1 bunchFresh basil(about 30g)
- 1 pinchSalt(to taste)
- 1 pinchBlack pepper(freshly ground, to taste)
Instructions
Preheat your oven to 400°F (200°C). Slice the baguette into 1 cm (approx. 0.4 inch) thick slices. Arrange them on a baking sheet.
Lightly brush each bread slice with some olive oil. Toast in the preheated oven for 5-7 minutes, or until golden brown and crispy. Keep an eye on them to prevent burning.
While the bread toasts, prepare the tomato topping. Wash the tomatoes and dice them into small, even pieces. Mince the garlic cloves finely. Roughly chop the fresh basil leaves. In a medium bowl, combine the diced tomatoes, minced garlic, chopped basil, 60 ml (approx. 1/4 cup) of olive oil, salt, and freshly ground black pepper. Mix well.
Once the toasted bread is ready, remove it from the oven. If desired, you can rub a raw garlic clove over one side of each toasted slice for an extra garlic kick.
Spoon a generous amount of the tomato mixture onto each toasted bread slice. Arrange the bruschetta on a serving platter. Drizzle with a little extra virgin olive oil just before serving.
Serve immediately and enjoy this classic Italian delight!
