Instructions
Preheat your oven to 175°C (350°F). Grease and flour an 20 cm (8-inch) square baking pan or line with parchment paper.
First, prepare the streusel. In a medium bowl, combine 100g all-purpose flour, 75g packed brown sugar, and 5g ground cinnamon. Add the 60g cold, cubed unsalted butter. Use your fingertips or a pastry blender to cut the butter into the dry ingredients until coarse crumbs form. Set aside.
For the cake, in a large bowl, whisk together 250g all-purpose flour, 150g granulated sugar, 10g baking powder, and 2 pinches of salt.
In a separate bowl, whisk together 120ml whole milk, 80g melted unsalted butter, 1 large egg, and 5ml vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; a few lumps are okay.
Pour the cake batter into the prepared baking pan and spread evenly.
Sprinkle the streusel topping evenly over the cake batter.
Bake for 30-35 minutes, or until a wooden skewer inserted into the center of the cake comes out clean. If the streusel starts to brown too quickly, you can loosely tent the cake with aluminum foil.
Remove from the oven and let cool in the pan on a wire rack for at least 15 minutes before slicing and serving. Enjoy!
