- 500 gKirby cucumbers(or pickling cucumbers)
- 240 mlWater
- 240 mlWhite vinegar
- 15 gCanning salt
- 10 gGranulated sugar
- 2 clovesGarlic(peeled and thinly sliced)
- 5 gFresh dill sprigs(about 2-3 sprigs)
- 2.5 gMustard seeds
- gRed pepper flakes(optional, for a hint of heat)
Instructions
Wash the cucumbers thoroughly. Depending on your preference, you can slice them into spears, rounds, or leave them whole if they are small enough to fit in your jar.
In a medium saucepan, combine the water, white vinegar, canning salt, and granulated sugar. Bring the mixture to a boil over medium-high heat, stirring until the salt and sugar are completely dissolved. Remove from heat and let it cool slightly.
While the brine cools, tightly pack the sliced or whole cucumbers into a clean 1-liter (quart) Mason jar or another airtight container.
Add the sliced garlic, fresh dill sprigs, mustard seeds, and red pepper flakes (if using) directly into the jar with the cucumbers.
Carefully pour the warm brine over the cucumbers, ensuring they are fully submerged. If needed, you can use a small weight or a piece of a cabbage leaf to keep the cucumbers under the brine.
Seal the jar tightly with a lid and let it cool completely to room temperature on your countertop. This usually takes about 1-2 hours.
Once cooled, transfer the jar to the refrigerator. Allow the pickles to chill and marinate for at least 24 hours before serving for the best flavor. They will continue to develop flavor over the next few days.
