Instructions
Rinse the short-grain rice under cold water until the water runs clear. This helps remove excess starch and prevents the pudding from becoming too sticky.
In a large saucepan, combine the rinsed rice, whole milk, sugar, vanilla extract, and a pinch of salt. Stir everything well.
Bring the mixture to a gentle boil over medium heat, stirring occasionally to prevent the rice from sticking to the bottom. Once boiling, reduce the heat to low.
Simmer for about 30-40 minutes, stirring frequently (especially towards the end of the cooking time) until the rice is tender and has absorbed most of the milk, resulting in a creamy consistency. If the pudding becomes too thick before the rice is cooked, you can add a little more milk.
Remove the saucepan from the heat. Taste and adjust sweetness if desired. Let it sit for a few minutes to thicken further.
Serve the classic vanilla rice pudding warm or chilled. Garnish with a sprinkle of ground cinnamon and sugar, or fresh fruits if you like.
