Instructions
In a large bowl, whisk together the flour, granulated sugar, and salt.
In a separate bowl, lightly beat the eggs. Add the milk and vanilla extract, and whisk until well combined.
Gradually add the wet ingredients to the dry ingredients, whisking continuously until a smooth batter forms. Be careful not to overmix; a few small lumps are fine.
Heat a large non-stick frying pan over medium heat. Add 1 tablespoon of butter and let it melt and coat the pan.
Pour about 60-80 ml (1/4 to 1/3 cup) of batter into the pan for each pancake, tilting the pan to spread the batter evenly into a thin circle.
Cook for 2-3 minutes per side, or until golden brown and cooked through. Repeat with the remaining batter, adding more butter to the pan as needed.
Serve the pancakes warm with your favorite toppings such as powdered sugar, fruit, or maple syrup.
