- 1 tbspbutterMilch
- 1 mediumonion(finely chopped)
- 2 clovesgarlic(minced)
- 3.5 ozwild garlic (ramps)(washed and roughly chopped)
- 3.5 cupsvegetable broth
- 0.5 cupheavy cream
- 1 pinchsalt(to taste)
- 1 pinchblack pepper(freshly ground, to taste)
for the croutons
- 2 slicesstale white bread
- 1 tbspolive oil
Instructions
Melt the butter in a large pot over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes.
Add the minced garlic and cook for another minute until fragrant, being careful not to burn it.
Stir in the roughly chopped wild garlic. Cook for 2-3 minutes until it wilts slightly.
Pour in the vegetable broth and bring to a simmer. Reduce the heat, cover, and let it cook for about 10-15 minutes, or until the wild garlic is tender.
While the soup is simmering, prepare the croutons. Cut the stale white bread into small cubes. Heat the olive oil in a pan over medium heat. Add the bread cubes and toast them until golden brown and crispy, stirring occasionally. Set aside.
Stir in the heavy cream. Return the soup to low heat and warm through, but do not boil. Season with salt and freshly ground black pepper to taste.
Ladle the velvety wild garlic cream soup into bowls and garnish with the crispy croutons. Serve immediately.
