- 200 gQuinoa
- 400 mlVegetable Broth
- 200 gFeta Cheese(crumbled)
- 1 unitCucumber(diced)
- 250 gCherry Tomatoes(halved)
- 0.5 unitRed Onion(finely chopped)
- 0.5 bunchFresh Mint(chopped)
- 0.5 bunchFresh Parsley(chopped)
- 4 tbspOlive Oil
- 2 tbspLemon Juice
- 1 tspDried Oregano

Instructions
Rinse the quinoa thoroughly under cold running water. In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until all the liquid is absorbed and the quinoa is fluffy. Remove from heat and let it cool completely.
While the quinoa cools, prepare the vegetables. Dice the cucumber, halve the cherry tomatoes, and finely chop the red onion. Crumble the feta cheese.
Chop the fresh mint and parsley. In a large bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper to create the dressing.
Once the quinoa is cooled, add it to the bowl with the dressing. Add the diced cucumber, halved cherry tomatoes, chopped red onion, crumbled feta, fresh mint, and fresh parsley.
Gently toss all the ingredients together until well combined. Taste and adjust seasoning if necessary. Serve immediately or chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
