Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, celery, and carrots. Sauté for 5-7 minutes until the vegetables are softened.
Stir in the minced garlic, dried oregano, dried basil, and red pepper flakes (if using). Cook for another minute until fragrant.
Pour in the crushed tomatoes and vegetable broth. Bring the mixture to a simmer, then reduce heat, cover, and let it cook for 10 minutes to allow the flavors to meld.
Add the rinsed cannellini beans and kidney beans to the pot. Stir well.
