- 400 gLeberkäse (bavarian meatloaf), sliced 1 cm thick
- 800 gPotatoes, preferably waxy
- 100 gOnion(finely chopped)
- 4 largeEggs
- 4 tbspVegetable oil(for frying)
- 1 pinchSalt(to taste)
- 1 pinchBlack pepper(freshly ground, to taste)
- 2 tbspFresh parsley(finely chopped, for garnish)
Instructions
Start by preparing the potatoes. Peel the potatoes and cut them into even slices or cubes, about 0.5 cm thick. This ensures they cook evenly and get crispy.
Heat 2 tablespoons of vegetable oil in a large non-stick pan or skillet over medium-high heat. Add the potato slices and spread them in a single layer. Cook for about 15-20 minutes, stirring occasionally, until they are golden brown and tender. Season with salt and pepper during the last 5 minutes of cooking.
While the potatoes are cooking, prepare the Leberkäse. In a separate pan, heat 1 tablespoon of vegetable oil over medium heat. Add the sliced Leberkäse and fry for 3-4 minutes on each side until golden brown and crispy.
Once the Leberkäse is done, remove it from the pan and keep warm. In the same pan, if needed, add another tablespoon of oil. Crack the eggs directly into the pan, being careful not to break the yolks. Season with a pinch of salt and pepper.
Fry the eggs sunny-side up for 2-3 minutes, or until the whites are set and the yolks are still runny. You can cover the pan for the last minute to help set the whites, if desired.
To serve, arrange the crispy Leberkäse and roasted potatoes on plates. Top each serving with a freshly fried egg. Garnish with fresh chopped parsley. Enjoy your hearty meal!
