- 1 kgPotatoes(floury or all-purpose)
- 2 tbspButterMilch
- 1 mediumOnion(finely chopped)
- 2 stalksCelery(finely diced)

- 100 mlHeavy cream
- 2 tbspFresh marjoram(chopped)

Instructions
Peel the potatoes, wash them, and cut them into large pieces. Place them in a large pot with lightly salted water and cook until very tender, about 20-25 minutes. Drain the potatoes, reserving about 1 cup (240 ml) of the cooking water.
While the potatoes are cooking, melt the butter in a separate large pot or Dutch oven over medium heat. Add the chopped onion, celery, and carrots. Sauté for about 5-7 minutes until the vegetables are softened but not browned.
Add the vegetable broth to the sautéed vegetables and bring to a simmer. Let it cook for about 10 minutes, allowing the flavors to meld.
Add the cooked potatoes to the vegetable broth mixture. Using a potato masher or an immersion blender, mash the potatoes directly in the pot until the soup reaches your desired consistency. For a smoother soup, you can blend it more thoroughly; for a chunkier soup, leave some potato pieces.
Stir in the heavy cream and fresh marjoram. If the soup is too thick, add some of the reserved potato cooking water until it reaches your preferred consistency. Heat through gently, but do not boil.
Season the soup with salt, black pepper, and freshly grated nutmeg to taste. Serve hot, garnished with crispy bacon bits if desired.
