- 500 gPotatoes(peeled and diced)
- 150 gSmoked Bacon(diced)
- 4 largeEggs
- 50 mlMilk
- 1 tbspFresh Chives(finely chopped)
- 1 tbspFresh Parsley(finely chopped)
- 1 Prise(n)Salt(to taste)
- 1 Prise(n)Black Pepper(freshly ground, to taste)
- 1 tbspButter(for frying)Milch
Instructions
Heat a large skillet over medium heat. Add the diced bacon and cook until crispy. Remove the bacon with a slotted spoon and set aside, reserving the bacon fat in the skillet.
Add the diced potatoes to the skillet with the bacon fat. Cook for about 15-20 minutes, stirring occasionally, until the potatoes are tender and golden brown. If needed, add a little butter or oil.
While the potatoes are cooking, whisk the eggs with milk, salt, and pepper in a medium bowl until well combined.
Once the potatoes are cooked, push them to one side of the skillet. Add the butter to the empty side of the skillet and melt it. Pour in the egg mixture.
Scramble the eggs, stirring gently until they are cooked to your desired consistency. Mix the scrambled eggs with the crispy potatoes and the cooked bacon.
Stir in the fresh chives and parsley. Taste and adjust seasoning with salt and pepper if necessary. Serve immediately.
