- 600 gZucchini
- 2 tbspOlive Oil
- 1 pinchSalt(to taste)
- 1 pinchBlack Pepper(to taste)
- 150 gFeta Cheese
- 1 bunchFresh Mint
Dressing
- 0.5 cupOlive Oil
- 3 tbspLime Juice
- 1 tspHoney
- 1 cloveGarlic
- 1 pinchSalt(to taste, for dressing)
- 1 pinchBlack Pepper(to taste, for dressing)
Instructions
Wash the zucchini and pat them dry. Cut them into approximately 0.2-inch (0.5 cm) thick slices. In a bowl, toss the zucchini slices with 2 tablespoons of olive oil, salt, and pepper.
Preheat your grill or a grill pan to medium-high heat. Grill the zucchini slices for 2-3 minutes per side, until they have nice grill marks and are slightly tender but still have a bite. Set aside to cool slightly.
For the dressing: Finely chop the fresh mint. In a small bowl, whisk together the 0.5 cup of olive oil, lime juice, honey, minced garlic, chopped mint, salt, and pepper until well combined.
Crumble the feta cheese into a large serving bowl. Add the grilled zucchini slices.
Pour the mint-lime dressing over the zucchini and feta. Gently toss to combine everything. Serve immediately or let it marinate for about 15-20 minutes for the flavors to meld.
