Salad

Dressing
- 0.5 cupFresh Cilantro
- 2 tbspLime Juice
- 1 tbspHoney

Instructions
Wash and peel the sweet potatoes. Cut them into 1/2-inch thick rounds or wedges.
In a large bowl, toss the sweet potato pieces with 2 tablespoons of olive oil, salt, and pepper until evenly coated.
Preheat your grill to medium-high heat (about 375-400°F or 190-200°C). Grill the sweet potatoes for 4-6 minutes per side, or until they are tender and have nice grill marks. Set aside to cool slightly.
While the sweet potatoes are grilling, prepare the dressing. In a small bowl, whisk together the chopped cilantro, lime juice, honey, 2 tablespoons of olive oil, and chili flakes. Season with salt and pepper to taste.
Once the grilled sweet potatoes have cooled slightly, transfer them to a large serving bowl. Pour the lime-cilantro dressing over the sweet potatoes and gently toss to combine.
Finely dice the red onion and crumble the feta cheese. Sprinkle these over the salad just before serving. Serve warm or at room temperature.
