- 2 mediumsweet potatoes(approx. 600g)
- 200 gfeta cheese(crumbled)
- 0.5 cupfresh mint leaves(chopped)
- 0.25 cupred onion(finely chopped)
Dressing
- 3 tbspolive oil
- 2 tbspfresh lime juice
- 1 tsphoney
- 1 pinchsalt(to taste)
- 1 pinchblack pepper(to taste)
- 1 tbspolive oil(for grilling)
Instructions
Wash and peel the sweet potatoes. Cut them into 1/2-inch thick rounds or wedges.
In a large bowl, toss the sweet potato pieces with 1 tablespoon of olive oil, salt, and pepper until evenly coated.
Preheat your grill to medium-high heat (375-400°F / 190-200°C). Grill the sweet potato slices for 3-5 minutes per side, or until tender and lightly charred. Alternatively, roast them in the oven at 400°F (200°C) for 20-25 minutes, flipping halfway.
While the sweet potatoes are grilling, prepare the dressing. In a small bowl, whisk together 3 tablespoons of olive oil, lime juice, honey, salt, and pepper until well combined.
Once the sweet potatoes are cooked, let them cool slightly. In a large serving bowl, combine the grilled sweet potatoes, crumbled feta cheese, chopped fresh mint, and finely chopped red onion.
Pour the lime dressing over the salad and gently toss to combine. Serve immediately or chill for later.
