For the Avocados
- 2 mediumAvocados
- 1 tbspOlive Oil
- 1 pinchSalt(to taste)

For the Salsa
- 200 gCherry Tomatoes
- 0.5 mediumRed Onion
- 1 cloveGarlic
- 0.25 cupFresh Parsley(finely chopped)
- 0.25 cupFresh Basil(finely chopped)
- 1 tbspLime Juice
- 1 tbspOlive Oil
- 1 pinchSalt(to taste)
- 1 pinchBlack Pepper(to taste)
For the Topping
- 100 gFeta Cheese(crumbled)
Instructions
Preheat your grill to medium-high heat (about 375-400°F or 190-200°C).
Prepare the avocados: Carefully cut each avocado in half lengthwise and remove the pit. Be careful not to cut through the skin. Brush the cut side of each avocado half with olive oil and sprinkle with a pinch of salt and pepper.
Grill the avocados: Place the avocado halves, cut side down, directly on the grill grates. Grill for 5-7 minutes, or until grill marks appear and the avocado is slightly softened but still holds its shape. Remove from the grill and set aside.
Prepare the salsa: While the avocados are grilling, finely dice the cherry tomatoes, red onion, and garlic. In a medium bowl, combine the diced tomatoes, red onion, garlic, chopped fresh parsley, and chopped fresh basil. Add the lime juice and olive oil. Season with salt and pepper to taste. Mix well to combine.
Assemble the stuffed avocados: Spoon a generous amount of the herb tomato salsa into the hollow of each grilled avocado half. Top with crumbled feta cheese.
Serve immediately as a delicious vegetarian main course or a flavorful side dish.
