Instructions
If using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning on the grill.
Prepare the vegetables: Wash the zucchini and bell peppers. Cut the halloumi into 1-inch cubes. Cut the zucchini, bell peppers, and red onion into similar-sized pieces suitable for skewering.
In a large bowl, combine the halloumi and chopped vegetables. Drizzle with olive oil, sprinkle with salt, pepper, and dried oregano. Toss gently to ensure everything is evenly coated.
Thread the halloumi and vegetables alternately onto the soaked skewers. Try to create a colorful pattern on each skewer.
Prepare the herb-mint dip: Finely chop the fresh mint and parsley. Mince the garlic. In a small bowl, combine the Greek yogurt, chopped herbs, minced garlic, and lemon juice. Season with salt and pepper to taste. Mix well and set aside.
Preheat your grill to medium-high heat. Once hot, place the skewers on the grill. Grill for about 3-4 minutes per side, or until the halloumi is golden brown and the vegetables are tender-crisp and slightly charred. Turn the skewers regularly to ensure even cooking.
Remove the grilled skewers from the heat and let them rest for a minute or two. Serve immediately with the prepared herb-mint dip.
