- 400 gHalloumi cheese
- 2 mediumBell peppers(mixed colors)
- 1 mediumZucchini
- 1 mediumRed onion
- 100 gCherry tomatoes
- 2 tbspOlive oil

For the Dip
- 200 gGreek yogurt
- 1 tbspFresh lemon juice
- 2 tbspFresh parsley(finely chopped)
- 1 tbspFresh mint(finely chopped)
- 1 cloveGarlic(minced)
- 1 pinchSalt(to taste)
- 1 pinchBlack pepper(to taste)
Instructions
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
Cut the halloumi into 1-inch (2.5 cm) cubes. Core and deseed the bell peppers, then cut them into 1-inch (2.5 cm) pieces. Cut the zucchini into 1/2-inch (1.25 cm) thick slices or 1-inch (2.5 cm) chunks. Peel and quarter the red onion, then separate the layers.
In a large bowl, combine the halloumi, bell peppers, zucchini, red onion, and cherry tomatoes. Drizzle with olive oil, then season with salt and pepper. Toss gently to coat all the ingredients evenly.
Thread the halloumi and vegetables alternately onto the skewers.
For the dip: In a small bowl, combine the Greek yogurt, lemon juice, chopped parsley, chopped mint, and minced garlic. Season with salt and pepper to taste. Mix well and set aside.
Preheat your grill to medium-high heat (375-400°F / 190-200°C). Grill the skewers for 10-15 minutes, turning occasionally, until the halloumi is golden brown and the vegetables are tender-crisp and slightly charred.
Serve the grilled halloumi skewers immediately with the herb-lemon dip.
