- 400 gHalloumi cheese
- 2 mediumZucchini
- 0.5 bunchFresh mint
For the Salad
- 2 tbspOlive oil
- 1 tbspLemon juice
- 1 pinchSalt(to taste)
- 1 pinchBlack pepper(to taste)
For the Glaze
- 3 tbspHoney
- 1 tbspSweet chili sauce
- 1 tspLime juice
- 1 tspSoy sauce
- 0.5 tspSmoked paprika
Instructions
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
Cut the halloumi cheese into 2 cm (approx. 0.8 inch) cubes. Thread the halloumi cubes onto the skewers. You should get about 8-10 skewers.
For the glaze: In a small bowl, whisk together the honey, sweet chili sauce, lime juice, soy sauce, and smoked paprika until well combined.
Prepare the zucchini-mint salad: Wash the zucchini and, using a vegetable peeler or mandoline, slice them into thin ribbons. Roughly chop the fresh mint.
In a medium bowl, combine the zucchini ribbons and chopped mint. Drizzle with olive oil and lemon juice. Season with salt and pepper to taste. Toss gently and set aside.
Preheat your grill to medium-high heat (375-400°F / 190-200°C). Lightly oil the grill grates.
Place the halloumi skewers on the preheated grill. Grill for 2-3 minutes per side, or until golden brown and grill marks appear.
During the last few minutes of grilling, brush the halloumi skewers generously with the honey-chili glaze. Turn them frequently to ensure even coating and prevent burning, until the glaze is sticky and slightly caramelized.
Remove the skewers from the grill. Serve the grilled halloumi skewers immediately with the fresh zucchini-mint salad on the side.
