Instructions
Cut the halloumi cheese into approximately 0.4-inch (1 cm) thick slices. Pat them dry with paper towels.
Heat 1 tablespoon of olive oil in a non-stick pan or on a grill pan over medium-high heat. Grill the halloumi slices for 2-3 minutes per side, until golden brown and slightly crispy. Set aside to cool slightly.
While the halloumi cools, prepare the dressing. In a small bowl, whisk together 2 tablespoons of olive oil, the juice and zest of one lime, honey, salt, and freshly ground black pepper. Taste and adjust seasonings as needed.
In a large bowl, combine the cubed watermelon and fresh mint leaves. You can tear larger mint leaves if desired.
Add the grilled halloumi slices to the bowl with the watermelon and mint. Drizzle the lime dressing over the salad.
