- 250 gStrawberries
- 100 gFeta cheese
- 0.5 bunchFresh mint
- 3 tbspOlive oil

Instructions
Wash the green asparagus and trim off the woody ends. If the spears are very thick, you can peel the lower third. Cut the asparagus into bite-sized pieces (about 1 to 1.5 inches long).
Bring a pot of lightly salted water to a boil. Add the asparagus pieces and blanch for about 3-5 minutes, depending on their thickness, until they are tender-crisp. Immediately drain and rinse with cold water to stop the cooking process and preserve their vibrant color. Set aside to cool.
Wash the strawberries, pat them dry, and hull them. Cut the strawberries into quarters or halves, depending on their size.
Crumble the feta cheese into small pieces. Wash the fresh mint, pat it dry, and chop it finely.
