- 500 gGreen asparagus
- 2 tbspOlive oil
- 1 unitLemon(organic, for zest and juice)
- 50 gAlmond slivers
- 1 tspSalt(to taste)
- 1 pinchBlack pepper(freshly ground, to taste)
Instructions
Preheat your oven to 400°F (200°C). Wash the green asparagus. Snap off the woody ends. If the spears are thick, you can lightly peel the bottom third, otherwise, it's not necessary for green asparagus.
Place the prepared asparagus on a baking sheet. Drizzle with olive oil, then season with salt and freshly ground black pepper. Toss gently to ensure all spears are coated.
Roast the asparagus in the preheated oven for 10-15 minutes, or until tender-crisp. The cooking time may vary depending on the thickness of the asparagus. Meanwhile, finely zest the lemon and then cut it in half.
While the asparagus is roasting, lightly toast the almond slivers in a dry pan over medium heat for 2-3 minutes until golden brown and fragrant. Be careful not to burn them.
Once the asparagus is done, remove it from the oven. Arrange it on a serving platter. Squeeze fresh lemon juice over the asparagus. Sprinkle with the lemon zest and toasted almond slivers.
Serve immediately as a delightful side dish or a light main course. Enjoy your Green Asparagus Dream!
